I am generally dubious about cake recipes with vegetables in, but I tried a chocolate and courgette cake this weekend, which was very good indeed, and uses olive oil instead of butter, so doubly healthy:

Nigella has a courgette and lime cake in How to be a Domestic Goddess. I'm not sure of the nutritional value though.

My Italian friend is also big on using Olive Oil in cakes/cookies rather than butter, I think it works quite well.

If I see someone flying round London on her umbrella, I'll wave :)

I think this cake is not for sale because it looks like home-made any ways home-made recipe is much better than commercial.

My kids would not try to taste cake with vegetables but with this one they were craving for more after they finished my experiment.
